Five Point Friday - Cantaloupe Sorbet

We are huge fruit lovers and hubby decided to use some fresh cantaloupe to make some homemade sorbet. I am not a huge cantaloupe fan, but the rest of the family is so they were looking forward to trying it.

This was the first time we had the ice cream maker out in a very long time so the kids, especially, Zoe, had a blast helping daddy mix it up.

Cantaloupe Sorbet
Serving Size 1 qt = 10 points
(I don't think anybody could eat a whole quart in one sitting so when I entered it into Weight Watchers I put it as 4 servings and got 2 points per serving. Guess that would be about a cup and some)
  • 1 large ripe cantaloupe, peeled, seeded, and cut into chunks
  • 1/3 c. sugar
  • 3 tbsp lemon juice
  1. Put the cantaloupe chunks in an electric blender and puree until mixture is smooth.
  2. Measure 4 c. of the puree and discard the rest. (You could mix the rest into yogurt for a new flavor or freeze for a refreshing treat)
  3. Return 4 c. of the puree back into the blender and add it the sugar and lemon juice.
  4. Pulse quickly to blend.
  5. Transfer mixture to a bowl; cover and refrigerate until chilled, at least an hour.
  6. Freeze the mixture in an ice cream maker according to the manufacture's directions.

Enjoy the cool, refreshing treat on a hot summer day!

Oh, I need to get back on that WW bandwagon. Months off and I want real ice cream, not sorbet. I need to get my fat ass back in gear!!!
