Five Point Friday - Shepherd's Pie
Yes, I know it's Saturday, but better late than never right?!

Heat a medium skillet over medium heat and add oil. Brown meat, breaking up into small chunks. Add onion, vegetables, and tomatoes. Cook 5 minutes. Pour mixture into small casserole dish. Peel potatoes (now that they are cooked the skin peels right off) and mash with the milk in a small bowl. Spread meat mixture with potatoes. Sprinkle with the cheese. Bake 10-15 minutes until cheese is browned and bubbling.

I've always heard about Shepherd's Pie, but while I like one pot dishes I'm not always a fan of mixing foods especially with my mashed potatoes. However, I found this recipe in a Weight Watchers book and thought I would give it a try. I absolutely loved it and the whole family agreed it was a keeper recipe.
Supposedly the recipe serves 4 with each serving being 8 points, but I used the same ingredients, put it in a 9X11 casserole dish and think that you could at least serve 6 with the recipe as it is. Please note though that the recipe is 8 points per serving! I know it's Five Point Friday, but this recipe was just too yummy not to share.
Shepherd's Pie
Serves 4 (big pieces) 8 points each
4 tsp canola oil
12 oz 93% beef (I am sure you could use ground turkey too)
1 c. frozen chopped onions
1 pkg frozen mixed vegetables
1 can diced Italian-style tomatoes
4 potatoes
3/4 c. fat-free or 1% milk
1 c. fat-free grated cheddar cheese
Use fork to poke holes in potatoes and cook in microwave. Mine took about 15 minutes. Let cool until you are ready to mash.

I like Shepherd's Pie in its many forms :-) I usually make one with leftovers from the Sunday pot roast dinner, layering carrots and chopped meat on the bottom with the gravy and mashed potatoes spread over it all and a thin dusting of cheese on top.
My husband would love this. I don't know how well it would turn out with me cooking it but I might give it a shot.

that recipe sounds good. i make something similar but not with the tomatoes but the tomatoes sound yummy. we'll be giving this a try soon. thanks for sharing
