Five Point Friday - Tomale Casserole
Whenever I think of fall food I immediately think chili. There is nothing better than a bowl of pipin hot chili on a cool night. This recipe puts a twist on it by making it casserole. It is absolutely delicious so if you haven't tried any of the Five Point Friday recipes yet, this is the one to start with!!
Tamale Casserole
Makes 6 servings
6 points per serving (it was worth the extra point!)
4 tsp. Canola oil
1 green pepper, seeded and chopped
2 red onions
1 jalapeno pepper
1 garlic clove
½ lb ground turkey breast
1 c. tomato sauce
1 c. frozen corn
¾ tsp salt
½ tsp chili powder
2 c. water
2/3 c. stone-ground yellow cornmeal
1/3 c. shredded fat free Monterey Jack Cheese
In large nonstick skillet, heat oil over medium heat. Sauté bell pepper, onions, jalapeno pepper, and garlic until softened, about 5 minutes. Add the turkey and cook, breaking apart with wooden spoon, until browned about 5-8 minutes. Stir in the tomato sauce, corn, ½ tsp salt, and chili powder. Bring to a boil. Reduce head and simmer, covered stirring once or twice, until the sauce thickens slightly, about 15 minutes. Transfer into an 8” square baking dish.
Preheat oven to 350 degrees. In a medium saucepan bring 1 c. water and remaining salt to a boil. In medium bowl, whisk the cornmeal into the remaining 1 c. water. Slowly pour the moist cornmeal into the boiling water in a thin steady stream, stirring constantly. Brink mixture to boil. Reduce heat and cook, stirring constantly, until the mixture thickens and begins to form large bubbles about 5 minutes. Spread over the turkey so it is completely covered. Bake 25 minutes, then sprinkle the cheese and bake until the cheese melts, about 5 minutes longer. Let stand 10 minutes before serving.
Warning: Using the chili powder and the jalapeno definitely adds heat. If you are serving little ones or those who don’t care for too much spice, you can omit the jalapeno and halve the chili powder to get the same delicious meal without the dragon fire!!
Hint!! While this recipe is super yummy and pleased my whole family from my super picky husband to two young children, it is not a “quick” recipe so perhaps plan to make it for a Saturday or Sunday when you have time for preparation. The leftovers were awesome though so then you can pack some for lunch during the week!!

Hubby and I were just talking about chili tonight on our 30 minute walk in the RAIN with the dog. It is that time of year here in WA state.
I have officially resigned from Weight Watchers meetings and am doing it at home with my husband and using that money to join the gym. It's better for me, really. I am sticking with it at home though!

I have a recipe for Tamale Casserole but after reading yours, I don't think I will ever make mine again. This sounds so good and so much healthier! Can't wait to give it a try. It is the perfect dish for these chilly fall evenings.
