FIVE POINT FRIDAY

I made this recipe at the beginning of the week and it was a hit with everbody. Even picky Dylan ate his whole piece of chicken.








Orange Chinese Chicken
5 points per serving (Serves 4)



1 lb. boneless, skinless chicken breasts (4 - 4oz.)
2 tsp. sesame oil
15 oz. can of mandarin oranges in light juice
1 Tbsp. orange zest
1 Tbsp. soy sauce
1/2 c. chicken broth
2 tsp. cornstarch
salt and pepper to taste


Heat sesame oil in large non-skillet pan over med/low heat. Add zest and cook until fragrant and slightly cooked about 1-2 min. Increase pan to med/high heat. Season both sides of chicken with salt and pepper. Add chicken to hot pan and cook until golden, flipping once. About 2 minutes on each side.


Add oranges and juice to chicken. Simmer for two minutes. Whisk together soy sauce, broth, and cornstarch in a small bowl. Add mixture to pan and simmer until sauce thickens and chicken is cooked through, about 5 minutes more.


5 points for 1 chicken breast with about 1/4 c. sauce.
Serve with some fresh green beans or another low point veggie for a delicous dinner!
